Dušené Kyselé Zelí – ( Cooked Sauerkraut )
Ingredients
- 2cans Sauerkraut(14.5oz)
- 1 onionsmall
- 2tbsp margarine or buttter
- 1tsp caraway seedsoptional
- 2cans water(cans from Sauerkraut)
- 1/4cup white sugar
- 1/2 tsp salt
- 1cup water
- 1/4 cup water
- 3 tbsp flour

Instructions
- In a medium saucepan melt butter and add finely chopped onions. Sate till golden brown.
- Open cans of sauerkraut, drain the water and add to the onion.
- Add 2 cans of water, sugar, caraway seed, and salt. Bring to boil than turn down the heat to Lo and simmer for 30 minutes.
- Add 1 cup of water and bring to boil.
Recipe Notes
Serve hot ,along with Pork Roast and Bread Dumplings to create the complete dish

Im am old czech man of 94and this brings back memories of depression yrs.My mother was cook at a few well to do families in czechoslovacia in early 1900.This was 1 of favorites be cause we raised our vegtables and generally had 1-2 pigs plus chi k,she could make many old country dishes.
Money was scarce so meals had to come from what you were able have in your larder.All the dishes she concocked meals were out of ths world.There
was a dish called Hozenfefer,out of this world,made from inexpensive wild jack rabbits,which were sold at a special meat market.Years ago they had huge slaughter of j rab. in Neb.The rabbits were then shipped to markets.

Thank you for sharing. I too have fond memories, specially participating in the process of making Sauerkraut. As kids it was our job to stomp on the grated and seasoned cabbage into a wooden barrel. With plastic bags on our feet we would happily stomp away during this unusual activity. Fun times.
I am 100% Czech my Grammy made this recipe & so did dad= he added couple strips of bacon sauted with the onions, caraway seeds. Yummy & delish!!!! Brings back great memories for me too!!!♡♡♡♡♡

I too have been born in the old CSSR living in Australia since 1980. Even though I visited Czech Republic few times in the past few years the thing I miss most is the Czech food. Thank you for the sauerkraut recipe which I’ll make for our German picnic. We have a small Bohemian Restaurant in town and I always love their sauerkraut and didn’t want to ask for the recipe since I already talked them out of their cucumber recipe! My mother, and me, always made the sauerkraut the Silesian (German) style which is also very delicious and am always asked for the recipe but love to cook different version of any meals.
How do you store leftover sauerkraut and for how long
ziploc freezer bag, freeze. Up to six month.
My Czech Nana made Zeli! She added a chopped ripe apple with the saute of butter and onion. Yummy!
I used to be married to a man who was polish and czek. I had this recipe book for czek recipes and there was a wonderful sauerkraut recipe I used to make but now I can’t remember how it was made. It did have onions in it but it was similar to creamed sauerkraut. Do you know the dish I am talking about. I would love to make it again.
The national/traditional dish is Pork roast, with dumplings and sauerkraut. Also sauerkraut is good with Ham stuffed potato dumplings,Roasted duck….pretty much any meat and dumpling.
I’m half Czech, my Swedish mother learned to cook Czech food from her mother in law. This was one of the our favorites as children.
