Lečo – Eggs with vegetables

Ingredients
- 1 large green bell peppersliced
- 3 tomatoesdiced
- 1/2 onionchopped
- 3 eggs
- Polish sausagesliced
- 2 Tbs of butter
- Pinch of salt
- Ground pepper

Instructions
- In a frying pan melt 2 tablespoons of butter and sauté onion.
- Add sliced pepper and diced tomatoes. Cook for five minutes covered.
- Add Polish sausage cut into small pieces, pinch of salt and black pepper. Cook for another five minutes.
- Beat the eggs in a cup and pour it over the vegetables. Mix with wooden spoon and continue stirring for two more minutes.
- This dish may be served as a breakfast or light dinner. Serve with toast or Czech bread.

Leco was a popular meal during my early years growing up in Czech, especially when we could get tomatoes and peppers from our garden.often made it without sausage.
Same in my family. It sure made nice summer dinner with big slice of bread. Yum
I’m so thankful for this website. I was born in the old Czechoslovakia, but we moved to South Africa just before my second birthday. I love Czech food. Although I speak Czech fluently, I struggle with the reading. Thus I’m so thankful for all the delicious Czech recipes in English. As my mother has passed away, she is not there to make Czech food anymore.
